House of Bruar Back Bacon
In the end his hard work paid off, as he found excellent pigs from farms in rural Aberdenshire that are succulent, tender and, indeed, award winning, as only last year were The House of Bruar named the diamond champion for its handmade pork sausages at the prestigious Smithfield Butchery Awards.
All of the House of Bruar’s bacon is cut using a traditional hand crank slicer, an apparatus typical of the late 19th century which can be operated only by skilled butchers.
Using this vintage machine, the butcher has full control over the speed of the blade, meaning it will never heat the meat when cutting, leaving tasty lean back bacon each time it is used.
