Smoked Dorset Red Cheddar gives these crackers their warm, woody character and that pleasing terracotta colour from the natural annatto. With over a quarter of each biscuit made from cheese, plus 20% butter and clotted cream, the texture is closer to a savoury shortbread than a standard cracker. Mustard powder and black pepper add background warmth, and each bite finishes with that proper smoked cheese tang.
